I almost acted as a back for the servers and a bar back while I was only getting paid for the busser position. I was given a very vague description of what the job would be and had very little training Barback- hours are long, you will most likely be working alone if you do prep Busser- fast paced, and sometimes you will be the only busser for the whole restaurant Most people are friendly, but it is competitive. One of the absolute worst fine dining jobs I have ever had. In his previous role, he gained valuable experience learning the ins and outs of the kitchen, especially under Chef Adam Halberg, whom he later reunited with at Barcelona where Halberg now serves as Senior Vice President. I worked for this company for almost a year but had to leave because I was moving to a state without a restaurant concept. But they allowed employees to get away with too much. Barcelona was usually very busy on the day to day. One company and concept that has suffered greatly from over-corporatization. Often just sitting around for hours doing absolutely nothing. They were all great people and everyone loved them. You gotta get through the testing to be a front server to make any money, there. It was an interesting place to work. I am not interested in working in a night club. I have never felt less supported by a management team in all of my work history. There has to be a server on duty til 3 am. Not interested in being at work at 4 in the morning. It took me no time at all to realize that much of what was told me in the interview was not really how things worked, in reality. Mandatory wine classes and lots of wine talk. One of the hardest parts about my job was the long hours with limited breaks, but that was compensated by customer satisfaction.
